Quality standard plan devised for Italy’s first ‘gourmet toast’ franchise

The challenge
Capatoast is the first local franchise specialised in gourmet toasts, with dozens of outlets across the country.
The rapidly expanding model required a solid, unified approach to ensure operational consistency and appropriate quality standards.
- Standardise procedures in all outlets to ensure consistent food quality and safety.
- Carry out audits regularly in support of staff activities.
- Digitise document management and daily records.

The solution
- Process mapping and standardisation: We analysed how the various outlets operated, identified the differences and the critical points, and finally compiled common, replicable procedures.
- Internal audits: We devised a monitoring plan with regular inspections to verify procedural compliance and act quickly in case of non-compliance.
- Digitisation of document flow: FoodAssist has been implemented to digitise all records (HACCP, training, manuals, audits, etc.) and ensure real-time traceability.
Implemented techniques
- Standardised procedures: Definition of an operational standard applicable across the entire network, from goods reception to service, including detailed instructions and visual aids.
- Scheduled audits: Planning of audits with standardised checklists to monitor hygiene, staff training, application of procedures, and documentation status.
- FoodAssist for digitalisation: Implementation of the FoodAssist software to automatically collect, store, and analyse all records required by regulations and company standards.

The results
- Consistent quality: All Capatoast stores owned by the parent company now operate according to common standards, increasing perceived quality and the consumer's trust.
- Ongoing field control: Regular audits make it possible to quickly identify and correct any deviations from the required standards.
- Digitalised document management: FoodAssist has eliminated paper-based processes, ensuring traceability, automatic alerts, and an extremely low risk of errors or oversights.
